Cheesy Chilli Cornbread Casserole

Fall is here! Halloween is right around the corner. Thanksgiving will be here before you know it. There is a chill in the air and my mama's in the kitchen. In my family, food is how we stay connected. We bond while cooking( YESSSS HUNNY!!! I can throw down in the kitchen). We have staple recipes for every season. One of our favorite recipes came by accident(we let my little brother get creative). To this day, when there is a chill in the air we know that Cheesy Chilli Cornbread Casserole will be on the table to warm us up. 1 lb. hamburger, browned, (drained)
½ cup chopped onion
1 can diced tomatoes (do not drain)
2 (15 oz) can chili beans
1 cup shredded cheddar cheese
1/2 cup additional cheddar cheese for batter (optional)
2 - packages Jiffy Corn Muffin Mix
1 packet of chilli seasoning


Mix Brown hamburger with onion and drain. Add Tomatoes, chili beans and seasonings. Simmer for 15 minutes. 

Put into greased 9x13 pan and sprinkle cheddar cheese on top. Mix corn bread mix according to box directions. Add a little cheese to the mix to taste.

 Pour corn muffin mix on top of the chili and cheese cover completely. Bake at 400 degrees for 25 minutes or until golden brown.

Yummy HEALTHY Lasagna!

Hi Loves!

Its been a while but I'm so happy to be back! I have an AMAZING recipe for a healthy lasagna! Its my new favorite dish to make! Being Italian, pasta is a HUGE part of my diet. I was so thrilled to find a recipe that stays true to lasagna, is a healthier alternative, and is made in half the time! So here it goes!

Sami's Skillet Lasagna

You'll Need:
700 mL of red gravy
3 cups water
12oz Lasagna Whole Wheat Pasta (I suggest Ronzoni)   
Turkey Sausage or Turkey Ground Meat
1 cup Fat Free Mozzarella Cheese (Shredded)

 1) Get a large skillet and bring the water and red gravy to a boil. Make sure it has a cover or it can get very messy!
2) Break uncooked lasagna pasta into fourths. I use a clean dish towel to help break them so the small pieces don't scatter all over.
3) Let lasagna pasta boil in the gravy and water for 16-20 minutes while covered. You may want to lower the heat to a simmer.
4) While the pasta is cooking bake the turkey sausage or pan fry the turkey meat.
5) Add cooked meat to skillet and stir contents. (Slice sausage first!) Cover and let cook for 5 minutes.
6)  Stir in mozzarella cheese until its melted.

To Casserole or Not to Casserole...

Fall is here! Fall is here! Bring on the Halloween decorations, Thanksgiving deals, and too soon Christmas decorations. While I'm not too found of the cooler temps and longer garment lengths my favorite part of the fall is the heartier meals. Now me personally I'm not a soup or stew kinda person, but I do love me a good casserole. So, the fall recipe I'm going to share with you is my own version of a Paula Deen (yes I said the P word) classic, "Wild Rice Casserole"...

Wild Rice Casserole
1 Box Wild Rice (Zatarain's or Uncle Ben's)
2 1/2 cups Sharp Cheddar Cheese (Bag or Freshly Shredded) 
1 Can Cream of Mushroom Soup 
1 lb cooked shrimped tail-off, peeled, and deveined
Seasonings (personal preference) 

1. Cook rice per instructions on box 
2. Preheat oven to 375 degrees
3. Thaw shrimp or boil if raw adding seasoning of choice to water for taste
4. After rice is done cooking combine rice, shrimp, soup, and 2 cups of cheese in a bowl, mix together ingredients. All ingredients will be cooked so add seasonings to taste. I use a little cajun seasoning, black pepper, and seasoning salt. 
4. Place mixture in a 13 x 9 casserole dish and place in oven. Bake for 20 minutes. 
5. Sprinkle remaining 1/2 cup cheese over top of casserole and bake until cheese is melted. 

***This recipe can easily be doubled by simple doubling the quantities listed above. Also, this recipe can be lightened up by using brown long grain and wild rice, healthy request cream of mushroom soup, and 2% cheddar cheese.***
